Our produce comes in every morning and we pick carefully through each box to make sure we have the best ingredients to make your favorite Tex-Mex meal. Our Salsa Fresca is made every hour from fresh, vine ripened roma tomatoes (no cans!) and our famous guacamole is made in small batches all day long. Need proof? The freezers in Chuy's are about the same size as the one in your house. All we put in there are french fries and ice cream for the kiddos.
Chuy’s love for the green chile dates back to 1989 when Mike and John traveled to Hatch, New Mexico, in search of the perfect pepper to complement our authentic Tex-Mex. The unique climate and rich soil of the Hatch Valley, not found anywhere else in the world, are key to the green chile’s legendary flavor. Chuy’s commitment to offering the most flavorful pepper on the planet continues today, and each year Chuy’s contracts with farmers in the Hatch Valley to grow over 1.75 million pounds of the freshest green chiles just for our restaurants. When they reach their height of flavor in August, Chuy’s sends a team to New Mexico to bring back the finest, fresh-picked crop just for you. We celebrate our love affair for this special pepper every year with our annual three-week Green Chile Festival in each of our restaurants.
We are kinda obsessed with homemade sauces, and we make them from scratch in small batches each and every day here at the restaurant.
